Procedure
- Cook the onions
Heat oil in a frying pan and fry the onions until softened.
- Add spices
Stir in garam masala, ground ginger, and chicken seasoning.
Cook for 1 minute to bloom the spices.
- Add the sauce base
Add chopped tomatoes, tomato purée, sugar, salt, garlic purée, cayenne, and water.
Bring to a boil, stirring.
- Simmer
Reduce heat and simmer uncovered for 10 minutes to thicken slightly.
- Add pineapple + cod
Stir in pineapple chunks and cod pieces.
Cover and simmer gently for 10 minutes, or until the fish is tender and flaky.
- Serve
Serve with rice, naan, or couscous.
