Schwartz for Chef Flavour Pairing Challenge is won by Compass Chefs

Dan Perea, NPD Chef, Compass / M&S Partnership, and Rob Hanlon, Commis Chef, Dublin M&S Restaurant, scoop gold at Hotelympia in the Schwartz for Chef Flavour Pairing Challenge.

Once again McCormick’s Schwartz for Chef Flavour Pairing Challenge at Hotelympia saw chefs from across the industry showcase their skills in front of a live audience, whilst competing for a highly coveted Salon Culinaire medal and showing off their flavour matching skills.

The Schwartz for Chef Flavour Pairing Challenge saw ten teams of two chefs cook and present a two-course meal for two in just 45 minutes using pairings from the 2012 Flavour Forecast.  Dan and Rob’s winning menu consisted of seared pink peppercorn lamb loin, herb lamb & bourbon bon bon, fondant potato, parsnip puree, baby carrots & asparagus,  and for dessert they served a strawberry & ginger shortbread, rosewater cream, strawberry sorbet & pistachio.  Their chosen pairings were bourbon and pink peppercorn and rosewater and ginger.

Steve Love, Senior Research Chef, McCormick (UK) Ltd; “Once again we have been highly impressed with the standard of entries and in particular, the entrants’ understanding of how flavours can work together in imaginative ways.  The chefs all work hard and have to deliver on the day under extreme pressure.  Dan and Rob demonstrated a good understanding of the brief and created two superb dishes with imagination and flair.”

The pair can now look forward to a ‘money can’t buy’ day to attend a McCormick ‘Flavour Creation Session’ to which they can bring along up to 7 other colleagues to participate in a hands-on workshop gaining valuable insight into the innovative and creative use of flavour. 

Dan and Rob’s winning Strawberry and Ginger Shortbread Mille-Feuilles with Rosewater Cream, Pistachio and Strawberry Sorbet & Pink Peppercorn Lamb Fillet, Herby Lamb Bon-Bon, Fondant Potato, Parsnip Purée, Asparagus Tips and Baby Carrots.
