- 10x150 g chargrilled chicken breasts
- 1 kg baby spinach, washed and stalks removed
- 450 g lambs lettuce
- 2 ripe, mangos, skinned and diced
- 500 g cherry tomatoes
- 150 g smoked bacon, cooked
- For the Dressing
- 150 olive oil
- 75 sunflower oil
- 45 orange juice
- 4 tbsp Coriander leaf
- 1 tsp Schwartz ® Ground Ginger
- 1 tsp caster sugar
Procedure
- Blend together the olive oil and sunflower oil.
- Add the orange juice, Schwartz Coriander leaf, Schwartz Ground Ginger and caster sugar and blend.
- Place the baby spinach and lambs lettuce in to a bowl. Add the cherry tomatoes, diced mango and toss with the orange and ginger dressing.
- Slice the chicken breast, place on the leaves and serve.
