Cook the chicken:
Heat the oil in a wok or large frying pan. Add the chicken strips and stir-fry for 2–3 minutes.
Add the vegetables & seasoning:
Add the red pepper, green pepper, onion, and fajita seasoning.
Cook for 6–8 minutes, until the vegetables begin to soften and the chicken is fully cooked.
Warm the tortillas:
Heat them in a dry pan, microwave, or oven.
Assemble each serving:
· Place one tortilla on a plate.
· Add a layer of chicken and vegetables.
· Top with another tortilla.
· Add another layer of chicken and vegetables.
· Sprinkle with grated cheese.
Grill:
Place under the grill until the cheese is melted and bubbling.
