To make the guacamole, place the onion and the chilli in a food blender and chop to a rough paste.
Cut open the avocados, remove the stones and scoop out the flesh into the food blender and roughly mix, adding the lime juice and coriander to taste.
Cook the sausages.
Cut the rolls down the middle. Place one sausage into each split roll, top with the crushed nachos, fresh tomato, guacamole, sour cream, Frank's RedHot Original Cayenne Pepper Sauce and French's Classic Yellow Mustard.
