Mix the apricots, breadcrumbs and sausage meat together to make the stuffing and season with a few pinches of the Montreal Steak Seasoning.
With a sharp knife cut a slit down the centre of the pork making it into a tube. Fill with the stuffing and then mix together the oil and the rest of the Montreal Steak Seasoning and brush over the pork.
Grill or roast until cooked, serve with a sauce of your choice.
