Prepare the pan
Heat a non-stick omelette pan over medium heat. Melt a small knob of butter.
Mix ham and eggs
In a bowl, combine the chopped ham with the beaten. Season with salt and pepper.
Cook the omelette
Pour about half of the egg mixture into the pan. Stir gently until it starts to set.
When mostly cooked, fold the omelette in half and slide onto a plate.
Repeat
Use the remaining mixture to make a second large omelette (or divide into smaller omelettes if preferred).
Serve
Serve immediately, ideally with toast, salad, or sautéed vegetables.
