Procedure
- Start the base
Heat the oil in a saucepan over medium heat.
Add the chopped onion and cook until lightly browned.
- Add herbs & aromatics
Stir in garlic granules, bay leaves, parsley, sage, and thyme. Cook for 1 minute.
- Build the stew
Add the mixed beans, flageolet beans, smoked sausage, diced red pepper, tomato purée, and chicken stock. Stir well.
- Cook
Bring to the boil, then cover and simmer for 15–20 minutes, stirring occasionally.
- Season & serve
Taste and adjust with salt and pepper.
Serve with crusty bread, rice, or potatoes.
